Smoked Tri-Tip

The California BBQ staple, this cut of beef hasn’t quite caught on with the rest of the country but it is becoming more popular by the day. As far as meats go, this is probably the most finicky so you better treat her right. If you overcook it by a bit or even cut it the wrong way you’ll end up with a very unsavory piece of cow. But if you do it right and then throw it on a French roll with the right BBQ sauce, this will be one of the best damn sandwiches you’ll ever have. You can even try it on a salad or in a taco. Hell, eat it plain with your hands you filthy animals. Welcome to the Golden State.
