There’s a reason people always say, “It tastes like chicken.”  Most poultry does not have a taste profile like other meats.  It’s a bit, well…plain tasting.  Sure, duck, game hens, pheasant, and other wild bird game will not taste like your average store bought Foghorn Leghorn, but let’s be honest, poultry indeed tastes like chicken.  It is your job to make it taste like better chicken. Whether you grill or smoke poultry, season it with your favorite rub, or baste it with some BBQ sauce, you can get a variety of great flavors with poultry. Just make sure you brine it first. Trust me.
